Food Post: Baking with Mom (Macaroons!)

Who knew a childhood favorite was so easy to make!

We always have macaroons around the holidays at my house, a delicious sweet staple. As it turns out the recipe literally has just 3 ingredients.  14oz sweetened condensed milk, one 14oz bag of coconut, 1tsp pure vanilla extract. That’s it! You can also add nuts or chocolate.

Our second batch we added chopped pecans and they were a pretty delicious addition.

Just out of the oven.

Mom says the trick is to squeeze them into a ball (instead of just spoon dropping) before baking. Helps them to stay together and come out looking like neat little circles. We also used parchment paper to prevent sticking.

How TO:

Preheat oven to 350 degrees

Mix condensed milk, vanilla, and coconut in mixing bowl (and anything else you’re adding)

Squeeze gently into balls and place on parchment paper a couple inches apart

Bake until golden and toasted on the top (about 10minutes)
